Fruitcake Cookies
Fruitcake Cookies is an impressive dinner. Made with 2 c. raisins, 1 c. water, 1 tsp. baking soda, 1 c. shortening and 1 c. white sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil raisins and water for 5 minutes.
Add the soda; stir. Do not drain off water, as that is your liquid.
Let cool.
Cream shortening.
Beat in eggs.
Add 1 cup flour with baking powder, salt, cinnamon and nutmeg, then add remaining 3 cups flour, vanilla and nuts.
To the dough, add a pinch of cloves and a pinch of allspice.
Add the dates, candied cherries and pineapple.
Mix fruit with another 1/2 cup flour; mix well.
Drop by spoonfuls onto a greased baking sheet.
Bake in a 275Β° oven for 25 minutes. Makes 10 dozen.
