Fruit Strudel
Fruit Strudel is an moderately easy dinner. Made with 1 1/2 c. apples, peeled, cored and diced, 1 1/2 c. pears, peeled, cored and diced, 1 c. fresh apricots, cored, diced, drained and rinsed, 1/3 c. seedless raisins and 6 phyllo sheets, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Preheat oven to 350°.
Spray cookie sheet with nonstick spray. In a medium bowl, combine all ingredients except phyllo sheets. Spread mixture on prepared cookie sheets.
Bake at 350° for 20 to 25 minutes until fruit is tender.
Cool completely.
Increase oven temperature to 400°.
Layer three phyllo sheets on top of one another.
Spoon one-half mixture along the edge of the phyllo. Roll phyllo jelly roll fashion and place on cookie sheet prepared with nonstick spray.
Spray strudel with spray to prevent drying. Score top of strudel with 7 diagonal cuts.
Do not cut all the way through.
Repeat process for second strudel.
Bake for about 10 minutes.
Yields 2 strudels, 8 servings.
