Fruit Noodle Pudding
Fruit Noodle Pudding is an moderately easy dinner. Made with 12 oz. flat wide egg noodles, 8 c. lightly salted boiling water, 1/4 lb. salted margarine, 2 apples, peeled, cored and diced and 3/4 c. plumped raisins, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
To plump raisins, soak them in juice for 1 hour or overnight. Preheat oven to 375Β°.
Cook noodles in the boiling water 5 to 10 minutes until tender.
Place noodles, margarine, apples and raisins in a large bowl.
Add eggs and vanilla.
Mix well.
Spoon mixture into a well-greased 9 x 13-inch baking dish.
Sprinkle with cinnamon sugar and bake for 45 minutes until top is brown and crisp.
Cut into squares.
Serve hot or cold.
