Fruit-Melon Salad
Fruit-Melon Salad is an moderately easy dinner. Made with 3 c. cubed watermelon, 1 1/2 c. cubed honeydew melon, 1 1/2 c. cubed cantaloups, 1 c. blueberries and 2 c. sliced peaches, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cut watermelon in half and scoop the edible portion and reserve for filling.
Cut a scallop edge around the rind.
Mix all of the fruits and melons except the cherries and fill the rind. If you like, you may garnish sprinkling coconut over the fruits and spacing the cherries on top.
