Fruit Bars
Fruit Bars is an moderately easy dinner. Made with 1/4 c. water, 1 tbsp. unflavored gelatin, 1 c. dried apricots, 1 c. raisins and 1 tsp. rum flavoring (optional), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Place water in a saucepan.
Sprinkle gelatin over water. Allow gelatin to soften for 5 minutes.
Stir over low heat to dissolve gelatin.
Combine remaining ingredients in a large bowl. Place mixture into a blender, 1/3 at a time.
Blend until mixture has a coarse texture, but contains not large chunks.
Add blended ingredients to gelatin in saucepan; stir well.
Line bottom and sides of an 8-inch square pan with wax paper.
Spray wax paper with a nonstick spray.
Spread mixture in pan.
Cool completely in refrigerator until firm, about 2 to 3 hours.
Cut into 24 bars. Store bars between layers of wax paper.
Yields 24 bars.
