Fruit Balls
Fruit Balls is an moderately easy dinner. Made with 1 c. pitted prunes, 1 c. dark raisins, 1 c. flaked coconut, 1 tsp. grated orange rind and 2 tbsp. orange juice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In food processor chop prunes and dates for 35 to 40 seconds or until finely chopped.
Place in a large mixing bowl.
Repeat process with raisins and coconut.
Add raisin mixture to prune mixture and mix well.
Stir in wheat germ, orange rind, orange juice, honey and 1/2 cup pecans.
Mix well.
Shape into 1 inch balls and roll in remaining pecans.
Store in airtight container with waxed paper between each layer.
