Take a firm onion and slice thick slices; separate into rings. Blanch a few rings at a time in boiling water for 15 seconds.
Cool quickly in ice water; drain.
Roll rings separate.
Roll in flour, dip in milk and roll one more time in a mixture of half pancake mix and half cornmeal.
Freeze on cookie sheet and pack in single layers.
Take out as many as you like at a time.
While still frozen, fry in fat until lightly browned.
