Fritter Batter
Fritter Batter is an moderately easy dinner. Made with 2 egg yolks, 1/3 c. water, 1/3 c. evaporated milk, 1 tbsp. lemon juice and 1 tbsp. melted butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix egg yolks, water and milk.
Add lemon juice and melted butter.
Resift flour, salt and sugar.
Combine the liquid and the dry ingredients with a few swift strokes.
Add 1/8 teaspoon salt to the egg whites.
Whip them until they are stiff.
Fold them into batter.
Fry the fritters until they are a golden brown. Sprinkle with some confectioners sugar before serving or top with your favorite jam or jelly.
