Fried Shrimp
Fried Shrimp is an moderately easy dinner. Made with 1 lb. shrimp (26 to 30 per pound), 1 small can evaporated milk, 2 eggs, slightly beaten, 1 tbsp. vinegar and 1 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Peel shrimp, leaving fantail if you like.
Split shrimp down the back and remove vein.
Mix milk, eggs, baking powder and vinegar together.
Put shrimp in the mixture and let them marinate for 1 hour.
Remove shrimp from mixture, then season with salt and pepper, or your favorite seasoning.
Dip shrimp in flour mix and fry at 380Β° in oil until light golden brown. (Do not overcook.)
