Fried Potatoes is an moderately easy dinner. Made with 4 or 5 medium potatoes, 2 small onions, 2 eggs, beaten, 1/2 c. diced, cooked ham or other leftover meat and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Slice unpeeled potatoes.

Peel and chop onions.

Put oil in cold skillet and heat to about 300Β°.

Scatter potato slices over bottom of skillet.

Cover and cook about 5 minutes.

Turn potatoes over and brown other side in covered frypan about 2 or 3 minutes. Uncover, add chopped onions and water.

Replace cover and cook 3 minutes longer.

Uncover and add eggs and meat.

Stir until eggs are cooked.

Serve warm.
