Fricasseed Rabbit
Fricasseed Rabbit is an moderately easy dinner. Made with 2 rabbits (2 lb. each), 1/4 c. butter, 1/4 c. shortening, 2 eggs, beaten and water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat
Wash rabbits thoroughly.
Pat dry. Cut into pieces, discarding bony rib section.
In Dutch oven, melt butter and shortening over medium-high heat.
Mix beaten eggs with 1 tablespoon water.
Dip rabbit in egg.
Roll in cracker crumbs.
Brown rabbit, turning until all sides are evenly browned.
Water to cover and onions.
Cover.
Bake about 2 hours or until tender.
Remove onions.
Add dumplings. Cook for 20 minutes.
