Fresh Pineapple Delight
Fresh Pineapple Delight is an easy dinner. Made with 1 medium pineapple, 1 egg, well beaten, 2 to 4 tbsp. sugar, 1 tsp. all-purpose flour and 1 (8 oz.) carton whipping cream, whipped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut lengthwise slice from pineapple.
Remove about 1/3 of pineapple.
Scoop pulp from slice; discard rind.
Scoop pulp from remaining portion of pineapple, leaving shell about 1/2-inch thick.
Set aside.
Chop pineapple into bite size pieces.
Crush 1 cup of pineapple pieces.
Reserve rest for dipping.
Combine crushed pineapple and juice, egg, sugar and flour in a large saucepan.
Cook over low heat until thickened.
Fold in whipping cream and pour into pineapple shell.
Serve dip with reserved pineapple and other fresh fruit cut into serving pieces.
