Fresh Corn Fritters
Fresh Corn Fritters is an moderately easy dinner. Made with 1/4 c. all-purpose flour, 1/2 tsp. salt, 1/2 tsp. baking powder, 2 egg yolks and 1 1/2 c. fresh corn, cut off the cob, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine flour, salt and baking powder; set aside.
Beat egg yolks.
Stir in corn, pepper and 1 tablespoon oil.
Add corn mixture to flour mixture.
Beat egg whites until they stand in peaks; fold into corn mixture.
Drop from tablespoon into iron skillet containing 1/2-inch hot vegetable oil.
Cook until golden brown, turning once.
Yield
