Combine apples, pecans and sugar.
Let stand one hour, stirring often; do not drain.
Combine flour, sugar, salt and spices.
Stir in butter, vanilla and eggs.
Spoon into 2 greased 1 pound coffee cans.
Tie a 2-inch band of foil around top of cans.
Bake at 325Β° for 1 hour and 15 minutes or until wooden pick inserted in center is clean.
Cool in cans for 10 minutes.
Remove from cans and complete cooling.
