Combine oil, apples, sugar, pecans and eggs in a large bowl. In separate bowl, sift flour, soda and salt.
Add this to apple mixture.
Add 2 teaspoons vanilla.
Bake in 3 layers at 325Β° for 30 to 35 minutes.
