Sprinkle diced apples with 1 cup sugar; set aside.
Beat eggs and remaining cup of sugar. Add oil; mix well.
Add dry ingredients.
Continue beating until well mixed.
Add vanilla, apples and pecans.
Mix well.
Bake in Bundt pan at 350Β° for approximately 1 hour.
