Fresh Apple Cake
Fresh Apple Cake is an moderately easy dinner. Made with 1 1/2 c. salad oil, 2 large eggs, 1 tsp. soda, 1 tsp. vanilla and 2 c. chopped pecans, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Prepare apples; set aside and cover.
Measure oil in large mixing bowl, add sugar and eggs and mix well at low speed until creamy smooth.
Sift flour and measure.
Then sift again with salt, soda and baking powder.
Add flour mixture to creamed mixture in small amounts.
Beat well after each addition.
When batter becomes stiff, remove beater and finish mixing by hand. Fold in chopped nuts and apples last.
Mix well.
Spread evenly in a 9 x 13-inch pan lined with greased wax paper.
Bake at 350Β° for about 55 minutes to 1 hour.
Turn out on cake rack to cool, or ice and serve from the pan.
