Freezer Tomato Sauce
Freezer Tomato Sauce is an moderately easy dinner. Made with 20 tomatoes, washed, peeled, cored and cut in chunks, 4 large onions, chopped (about 4 c.), 4 large carrots, peeled and shredded, 1/2 c. fresh parsley, chopped and 3 tbsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Bring slowly to boil, stirring often. Lower heat and simmer 30 minutes or until thick. Cool slightly. Measure 3 cups at a time into a blender or food processor. Cover and process on high until smooth (about 1 minute). Pour into freezer containers in serving sizes, leaving 1/4-inch headroom.
Seal, label and freeze.
Makes 16 cups.
