Framer's Breakfast
Framer'S Breakfast is an moderately easy dinner. Made with 1/2 c. chopped onion, 1/2 c. butter, 4 medium potatoes, peeled and finely chopped, 2 tsp. water and 12 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a skillet, cook onion in butter until tender.
Add potatoes, water and 1/2 teaspoon of salt.
Cover and cook over medium heat for about 10 minutes or until potatoes are tender.
Stir occasionally.
Beat together eggs, milk, 1/2 teaspoon salt and dash of pepper; stir in ham or bacon bits.
Pour over potato mixture. Cook, without stirring, until mixture begins to set on the bottom and around the edges.
Use spatula to lift and fold partially covered egg mixture so the uncooked portion flows underneath. Continue cooking over medium heat for about 4 minutes or until eggs are cooked but still glossy and moist.
Delicious!
Serves 6 or 8.
