Fluffy Coconut Pudding
Fluffy Coconut Pudding is an moderately easy dinner. Made with 1 envelope unflavored gelatin, 1/4 c. cold water, 3 tbsp. boiling water, 3 egg whites and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Soften gelatin in cold water.
Add boiling water and stir until dissolved.
Cool to room temperature.
Beat egg whites with salt until frothy.
Add sugar, 1 tablespoon at a time, and beat well after each addition.
Continue beating until mixture holds a peak when beater is lifted.
Slowly beat gelatin.
Add vanilla to whipped cream.
Mix and fold into egg whites.
Fold in coconut. Cover and chill at least 4 hours.
Garnish with Mandarin oranges and serve.
