Fish Soufflé
Fish Soufflé is an moderately easy dinner. Made with 1 tsp. onion juice, 1/2 tsp. salt, 1/8 tsp. pepper, 1 c. medium white sauce and 2 eggs, separated, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Add onion juice, salt and pepper with white sauce.
Stir in beaten egg yolks and add flaked fish.
Beat egg whites until stiff and fold into mixture.
Pour into greased baking dish.
Place in pan of hot water.
Bake in moderate oven (350°) for 60 minutes. Serve from same dish.
Serves 4.
