Fish Creole
Fish Creole is an moderately easy dinner. Made with 1 (16 oz.) frozen or fresh fish fillets (any sweet white fish - orange roughy is good.), 1 (16 oz.) can of tomatoes, 1 medium onion, diced, 1 medium green pepper, diced and 1/4 tsp. garlic powder, this recipe delivers authentic, satisfying flavors. Thaw fish slightly and cut into bite size pieces.
Combine all ingredients into a 2 quart casserole dish.
Stir to break up tomatoes.
Cover and bake at 375Β° 1 3/4 hours or until fish and rice are tender.
Stir once after 45 minutes.
