Fiesta Taco Bake
Fiesta Taco Bake is an impressive Mexican dinner you can prepare in about 1 hour 42 minutes. Made with c. (8 oz.) uncooked radiatore pasta, . ground beef, c. (1 medium) chopped onion, c. frozen whole kernel corn and c. mild taco sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oven to 350Β°
Cook radiatore according to package directions; drain
Meanwhile, in 10-inch skillet, cook ground beef and onion, stirring occasionally, until browned, 5 to 7 minutes; drain off fat
Stir in corn, taco sauce, tomato sauce, chilies, cumin and salt
Stir in radiatore
Spoon into greased 2-quart casserole
Sprinkle cheeses over mixture in alternating rows to form 3 Cheddar and 2 Mozzarella strips
Bake for 25 to 30 minutes or until heated through
Garnish with tomato wedges and avocado slices
Makes 6 servings.
