Fiesta Squash Casserole
Fiesta Squash Casserole is an moderately easy dinner. Made with 5 to 6 yellow squash, sliced, 2 medium onions, sliced, 1 lb. velveeta cheese, cubed, 1 (10 3/4 oz.) can cream of mushroom soup and 1/4 c. picante sauce, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Heat oven to 350Β°.
Add squash and onions to boiling water; cook 10 minutes or until tender.
Drain.
Set aside.
Put cheese, soup, picante sauce and seasoning in a pan on medium heat until cheese is melted.
Mash squash and onions.
Stir squash and 1 cup of chips into cheese.
Spoon into a greased 13 x 9-inch baking dish.
Sprinkle with rest of chips.
Bake 30 minutes or until heated.
