Favorite Fruit Cobbler
Favorite Fruit Cobbler is an moderately easy dinner. Made with 1 can sliced fruit (1 lb. 13 oz.), 1 tsp. cinnamon, 1 tbsp. lemon juice, 1 c. flour and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Grease an 8-inch square baking dish. Drain fruit and arrange in bottom of dish.
Sprinkle fruit with cinnamon and lemon juice. Sift together flour, baking powder and salt. Cream the butter with 3/4 cup sugar.
Beat until fluffy. Add dry ingredients alternately with milk. Spread this batter over fruit.
Combine remaining 1/3 cup sugar with cornstarch. Sprinkle over batter. Gently pour 1 cup boiling water over entire mixture. Bake at 350Β° for 1 to 1 1/4 hours.
