Farmer's Breakfast
Farmer'S Breakfast is an moderately easy dinner. Made with 1/3 c. chopped onion, 1/4 c. chopped green pepper, 1/4 c. margarine, 1/2 c. chopped spam and 2 medium potatoes, cooked and cubed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In large pan, cook onion and green pepper in margarine.
Add Spam, potatoes and 1/4 teaspoon salt.
Cook for 10 minutes, stirring often.
Add eggs, water, 1/2 teaspoon salt and pepper; pour over Spam mixture.
Cook over low heat until set.
Can be used as a breakfast, a dinner or for supper.
