Fancy Garden Blend
Fancy Garden Blend is an moderately easy dinner. Made with 4 qt. thin sliced cucumbers, 6 medium peppers, sliced, 1/3 c. salt, 4 large carrots, sliced thin and 3 large onions, sliced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cover the first 6 ingredients in a large plastic container with ice water. Stir occasionally. When all ice is melted, drain. Place in large pot on stove.
Mix together the remaining ingredients.
Bring to a boil and pour over vegetable mixture. Bring back to a boil and continue simmering as you fill jars.
Put tops on and seal. Makes 6 to 8 pints.
