Fajitas
Fajitas is an moderately easy dinner. Made with 1 lb. boneless, skinless chicken breasts, 4 slices red onion, cut 1/4-inch thick, 2 tbsp. each; olive oil and lime juice, 2 large bell peppers, halved and 2 garlic cloves, minced, this recipe delivers authentic, satisfying flavors. Combine chicken, onion, olive oil, lime juice, peppers, garlic and salsa in sealed plastic bag.
Marinate in refrigerator for 2 to 24 hours.
Grill or broil chicken and vegetables from 4 to 5-inches from heat for 5 to 8 minutes per side while bringing marinade to a boil.
Cut chicken and vegetables into thin strips. Divide among tortillas and drizzle with marinade.
Sprinkle with Cheddar cheese.
Roll up.
