Place bottom crust in 8-inch pie pan.
Spread diced potatoes evenly over bottom crust.
Sprinkle minced onion over potatoes. Spread pieces of pork evenly on top of potatoes and onion.
Season to taste.
Cover with vented top pie crust and bake at 350Β° for 1 hour.
