English Hot Pot
English Hot Pot is an moderately easy dinner. Made with 1 flank steak or round steak, 2 medium onions, thinly sliced, 4 carrots, cut into 1 inch pieces, 6 medium to large potatoes and melted butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Remove all fat from steak.
Cut steak into 1 1/2 inch cubes. Place in deep 3-quart casserole dish.
Cover steak with sliced onions, separated into rings.
Sprinkle with salt and pepper. Add enough water to barely cover meat.
Cover onions with sliced carrots.
Sprinkle with salt and pepper.
Peel potatoes and cut into slices (not too thin).
Rinse well. Layer the potatoes on top of carrots, sprinkling the layers with a little salt.
Brush top layer with melted butter.
Bake at 400Β°, uncovered, for about 2 1/2 hours.
If top layer of potatoes is becoming too brown, cover loosely with foil during last 1/2 hour of cooking.
