English Fruit Teabread is an moderately easy dinner. Made with 6 oz. raisins, 4 oz. sultanas or golden raisins, 2 oz. currants, 6 oz. soft brown sugar and 1/2 pt. strained cold black tea, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Put the dried fruit and sugar in a bowl.
Pour the tea over; soak overnight.
Grease and base-line a 2-pint loaf tin.
The next day, add the egg, flour, baking powder and mixed spice to the fruit and tea mixture.
Beat thoroughly with a wooden spoon until all ingredients are evenly combined.
Spoon into the prepared tin; level the surface.
Bake at 350Β° for about 1 1/4 hours, or until well risen and a skewer inserted in the center comes out clean. Turn out onto a wire rack to cool.
Serve sliced and spread with butter.
