Enchilada Pie
Enchilada Pie is an moderately easy dinner. Made with 1 pkg. corn tortillas, 2 lb. ground beef, 1 large onion, salt and pepper to taste and garlic salt to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Line large rectangular pan with about 9 tortillas.
Brown ground beef and onion; add seasonings.
Pour meat mixture over tortillas.
Mix together beans with cubed cheese.
Pour over other mixture.
Cut remainder of tortillas in strips and place on pie. Mix together Ro-Tel and soup.
Pour over pie.
Cook for 30 minutes at 275°, then turn oven down to 250° and cook for an additional 30 minutes.
