Enchilada Lasagna
Enchilada Lasagna is an moderately easy dinner. Made with 1 pkg. corn or flour tortillas (in refrigerator section), 1 can enchilada sauce, 1 pkg. taco seasoning (follow directions on pkg.), 1 lb. hamburger (brown with taco seasoning) and 1 (about 16 oz.) pkg. shredded jack cheese or mexican cheese, mixed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In 9-inch round casserole dish, pour a little enchilada sauce. Place 3 tortillas and add a little sauce.
Add 1/2 hamburg mixture and 1/2 onion.
Add some shredded cheese.
Repeat, layering tortillas, sauce, hamburg, onion and cheese, then finish with tortillas and sauce, then rest of cheese.
Bake covered at 350Β° for 30 minutes, then uncovered about 15 minutes.
Let stand before serving.
Serve with salsa, sour cream, back olives, chopped tomatoes, lettuce or whatever you like.
