Enchilada Casserole
Enchilada Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 1 c. water, 1 medium green pepper, diced, 2 c. shredded cheddar cheese and 2 (14 1/2 oz.) cans diced tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine beef, tomatoes, water, chili powder, green pepper and onion in a large saucepan. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes.
Season to taste with salt and pepper.
Line a 9 x 13 x 2-inch baking pan with 1/3 of the tortillas.
Top with 1/3 of the sauce and 1/3 of the cheese. Repeat with the remaining ingredients, making 2 more layers but reserving the remaining 1/3 cheese.
Bake, covered, in a 350Β° oven for 45 minutes.
Sprinkle the remaining cheese on top of the casserole.
Serve with salsa, if desired. Makes 8 to 10 servings.
