Brown ground beef and drain. Add taco seasoning and water. Simmer 15 minutes. Add tomatoes, enchilada sauce and Colby cheese. Simmer for 20 minutes. Fill each tortilla with 1 tablespoon of sauce and fold. Arrange in a 13 x 9-inch baking dish. Pour remaining sauce over all. Sprinkle Mozzarella cheese on top. Bake for 30 minutes at 350Β°.

Serve with shredded lettuce, sour cream, sliced black olives and nacho chips, by guests as they desire.
