Egyptian Stew
Egyptian Stew is an moderately easy dinner. Made with 1/2 c. oil, 1 c. sliced onions, 2 c. corn, cut fresh from cob, 2 c. zucchini and 1 c. lima beans, soaked overnight, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Brown onions and peppers lightly in the oil.
Add the beans, corn and small amount of water and simmer 1/2 hour.
Then add zucchini, tomatoes, parsley and seasonings.
Cook very slowly for 45 minutes.
Add water when needed.
