Make a sauce with the first 8 ingredients.
Add salt and pepper to taste.
Hard-cook eggs or cook less time, if preferred. Shell while warm and put in shallow baking dish.
Surround with the sauce and sprinkle with croutons.
Reheat if necessary in slow oven (300Β°).
Just before serving, sprinkle with parsley.
