Eggs Florentine

Coat pan with little olive oil and cook on low heat in pan the eggs, goat cheese and dried tomato until light and fluffy.
In a saute pan, add olive oil, garlic and spinach.
Cook until spinach is just wilted.
Add spinach to muffin.
Top with egg and Tarragon Sauce.
