Eggs Day Ahead
Eggs Day Ahead is an moderately easy dinner. Made with 2 dozen eggs, 1/2 cup milk, 1/2 stick butter, 1/2 cup sharp shredded cheese and 2 lb. cooked sausage, ham or bacon, crumbled, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Scramble eggs with milk and 1/2 of butter.
Saute mushrooms in remaining butter.
Mix soup and sherry, heat in small pan. Put eggs in 9 x 13 baker, cover with meat, mushrooms and soup mixture. Sprinkle with cheese, cover with foil and refrigerate overnight. Bake at 250 for 50 minutes uncovered.
Serves 10-12.
