Eggs Creole
Eggs Creole is an moderately easy dinner. Made with 3 tbsp. chopped onion, 3 tbsp. chopped green pepper, 2 tbsp. melted fat or oil, 1 1/2 c. cooked or canned tomatoes and 2/3 c. water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook the onion and green pepper in oil in a large frypan, until the onion is lightly browned.
Add the tomatoes and water; heat to boiling.
Add the uncooked rice, salt and pepper.
Cover; cook over low heat until rice is tender, 25 to 30 minutes.
Stir occasionally with a fork to keep from sticking.
If the rice becomes dry, add a little more water.
Drop eggs on rice.
Cover; simmer 5 to 10 minutes, or until eggs are as firm as desired.
