Eggplant Supreme
Eggplant Supreme is an moderately easy dinner. Made with 2 lb. ricotta cheese (skim or whole milk), 1/2 to 1 lb. mozzarella cheese, 2 boxes frozen spinach, cooked and drained, 2 medium eggplant, cut on length and 1 jar or can tomato sauce with mushrooms, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat oven to 350Β°. Fry eggplant and drain on paper towels. Cook spinach according to directions and drain.
Mix Ricotta cheese and spincah, don't beat, just blend.
Spread evenly in pan. Layer eggplant on top.
Either slice or grate Mozzarella cheese and layer over eggplant.
Cover with sauce.
Sprinkle grated cheese. Give it a blessing and throw it in preheated oven for 45 minutes until bubbly.
