Eggplant Pie
Eggplant Pie is an moderately easy dinner. Made with 2 c. shredded mozzarella cheese, 1/4 c. chopped green pepper, 1/4 c. chopped onion, 1 c. spaghetti sauce with mushrooms and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Saute peppers and onion in butter until tender.
Blend in spaghetti sauce and salt.
Bring to a boil and add eggplant.
Cook partially covered for 10 minutes or until eggplant is almost tender.
Pour 1/2 the mixture into the pie shell.
Top with 1/2 the cheese.
Add remaining mixture and top with remaining cheese. Bake at 400Β° for 30 minutes.
Let stand 15 minutes before serving.
