Eggplant Patrice
Eggplant Patrice is an moderately easy dinner. Made with 1 small eggplant, 4 medium sized sliced tomatoes, 2 medium sized chopped green peppers, 2 medium sized chopped onions and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Unpeeled eggplant about 1/4 inch thick.
Parboil until partially tender.
Place a layer of eggplant slices in a 13 x
9 x 2-inch baking dish.
Add a layer of tomatoes.
Fill spaces with a mixture of chopped pepper and chopped onions. Sprinkle with salt and pepper.
Add a layer of cheese.
Repeat layers until casserole is filled.
End with cheese.
Cover and bake at
400° until mixture is steaming.
Remove cover, reduce heat to 350° and bake about 30 to 45 minutes or until eggplant is tender and sauce thick.
