Eggplant Mozzarella
Eggplant Mozzarella is an moderately easy dinner. Made with 1/2 c chopped green onions, 1/2 c sliced mushrooms, 1/4 c water, 2 c spaghetti sauce and 1/2 tsp salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 350Β°. In a large saucepan over low heat cook green onions and mushrooms in 1/4 cup water until tender. Add spaghetti sauce; bring to a boil.
Reduce heat; simmer 20 to 25 minutes.
Sprinkle salt over sliced eggplant; set aside to cool about 10 minutes.
