Eggplant Italiano
Eggplant Italiano is an easy dinner. Made with 1 medium eggplant, 2 - 8 oz. cans tomato sauce, 1-2 tsp. oregano, 1/2 c. sharp cheese, shredded and 6 oz. mozzarella cheese, sliced, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Pare eggplant and slice into 1/8 inch slices.
Spread 2 Tbsp. tomato sauce in the bottom of a 2 quart casserole.
Layer half of eggplant, 1 can tomato sauce, half of oregano, and half of sharp cheese.
Microwave at high power 14-16 minutes, rotating dish 1/4 turn after 8 minutes.
Add mozzarella cheese.
Microwave at high power 1-2 minutes, or until cheese has melted.
