Eggplant Elegant
Eggplant Elegant is an moderately easy dinner. Made with 1 large eggplant, 1/4 c. butter, 1/4 c. grated onion, 1/2 tsp. salt and 2 tsp. worcestershire sauce, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Peel and cube a large eggplant into 1-inch pieces.
Cook until tender in as little water as possible about 5 minutes.
Stir frequently to cook all the cubes.
Remove from heat; add butter, grated onion, salt and Worcestershire sauce.
Blend all ingredients and add crumbled crackers, until all moisture is absorbed.
Place mixture in a greased 1-quart baking dish; cover with grated cheese and bake in 400Β° oven about 20 minutes, until thoroughly heated and cheese is slightly browned.
Serves 6.
