Eggplant Dressing
Eggplant Dressing is an moderately easy dinner. Made with 1 medium eggplant, precooked, 1 c. stuffing mix, 1 beaten egg, 1 c. grated cheese and 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mix the eggplant, stuffing mix, egg, cheese, milk and onion; mix well together.
Pour into a casserole dish.
Top with 1/2 cup stuffing mix.
Bake at 350Β° for 35 minutes.
