Eggplant Dressing
Eggplant Dressing is an moderately easy dinner. Made with 1 small cornbread, 1 eggplant, 1 lb. ground beef, 1 bell pepper, diced and 1 onion, diced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Peel and cube eggplant.
Boil until tender in small amount of water.
Saute meat, pepper, onion and celery.
Crumble cornbread, then add meat mixture, eggplant and soup.
Add salt and pepper. Mix all together.
Bake in greased pan at 350Β° for 45 minutes.
Can be frozen.
