Rinse eggplant.

Peel and slice almost all the way through (accordion style).

Place eggplant in a 2-quart saucepan.

Place onion and bell pepper slices between eggplant slices.

Combine celery, tomatoes, salt, peppers, oil and vinegar; pour over eggplant.

Cook, covered, over medium heat until eggplant is tender (about 20 minutes).

Place in serving dish; sprinkle with cheese.
