Eggplant Creole
Eggplant Creole is an moderately easy dinner. Made with 1 large eggplant, 1 onion, sliced, 1 bell pepper, sliced, 3 ribs celery, chopped and 1 (16 oz.) can tomatoes, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Rinse eggplant.
Peel and slice almost all the way through (accordion style).
Place eggplant in a 2-quart saucepan.
Place onion and bell pepper slices between eggplant slices.
Combine celery, tomatoes, salt, peppers, oil and vinegar; pour over eggplant.
Cook, covered, over medium heat until eggplant is tender (about 20 minutes).
Place in serving dish; sprinkle with cheese.
Makes 6 to 8 servings.
