Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, 1 onion, chopped fine, 1 1/2 c. milk, 2 eggs and 1/4 c. cracker crumbs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Peel eggplant and cut in pieces the size of thumb.
Put into 1 1/2 quarts salted boiling water; cook until tender.
Add finely chopped onion, cracker crumbs and butter while very hot; mix well. Beat up eggs and add milk; turn into eggplant mixture.
Add mushroom soup and Cheez Whiz (optional).
Bake in casserole at 350Β° for 1 hour.
